Tempering the Eggs

  1. Slow Incorporation. Gradually pour one‑third of the hot cream into the egg‑sugar mixture while whisking constantly. This gentle tempering raises the egg temperature without scrambling them, creating a smooth custard base.
  2. Combine Fully. Once the first portion is incorporated, whisk in the remaining cream. The custard should be uniform, glossy, and free of lumps.
  3. Strain. Pass the mixture through a fine‑mesh sieve into a clean pitcher. Straining removes any cooked egg fragments and vanilla bean shards, ensuring a silky final product.

Baking the Crème Brûlée

  1. Oven Time. Bake for 35‑40 minutes, or until the custard is set around the edges but still slightly trembling in the center. A knife inserted near the rim should come out clean.
  2. Cool. Remove the ramekins from the water bath and let them cool to room temperature. Then cover each with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to develop flavor and firmness.
