  • 1 cup sour cream (full‑fat)

  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • Extra sour cream for serving (optional)

Instructions

Searing & Building the Base

  1. Heat the Skillet. Place a wide, heavy‑bottomed skillet over medium‑high heat for 3 minutes. Add 2 tablespoons unsalted butter and 1 tablespoon olive oil. When the butter foams and the oil shimmers, you’ve reached the perfect temperature for browning.
  2. Sear the Chicken. Add the seasoned chicken strips in a single layer, being careful not to crowd the pan. Cook 3‑4 minutes per side without moving them, allowing a golden crust to form. Transfer the chicken to a plate and keep warm.
  3. Sauté Aromatics. Reduce the heat to medium. In the same skillet, add the diced onion and sliced mushrooms. Cook, stirring occasionally, until the onions turn translucent and the mushrooms release their liquid—about 5 minutes. Add the minced garlic and cook an additional 30 seconds until fragrant.
  4. Deglaze & Thicken. Sprinkle 1 tablespoon flour over the vegetables, stirring to coat. Pour in ½ cup white wine (if using) and scrape the browned bits from the pan with a wooden spoon. Let the liquid reduce by half, then stir in 1 cup chicken broth and 2 teaspoons Dijon mustard. Simmer for 3 minutes until the sauce begins to thicken.
  5. Finish the Sauce. Lower the heat to low and whisk in 1 cup sour cream until fully incorporated. Return the seared chicken to the skillet, toss to coat, and let everything warm together for 2 minutes. Taste and adjust seasoning with additional salt or pepper if needed.
