Cream Base
- 3 cups vegetable broth (low‑sodium)
- ½ cup coconut milk (full‑fat)
- ¼ cup heavy cream
- 1 tablespoon pure maple syrup
Garnish
- 2 tablespoons pumpkin seeds, toasted
- Fresh thyme leaves, for garnish
- Drizzle of extra‑virgin olive oil (optional)
Instructions
Blending & Simmering
- Combine Ingredients. Transfer the roasted vegetables and apple to a blender. Add the sautéed onion‑garlic mixture, vegetable broth, coconut milk, heavy cream, maple syrup, nutmeg, and cinnamon.
