Ingredients

Main Ingredients

  • 1 pound breakfast sausage, casings removed
  • 2 cups diced potatoes (about 2 medium)
  • ½ cup diced red bell pepper
  • ½ cup diced onion

Casserole Base

  • 6 large eggs
  • 1 cup whole milk
  • ¼ cup heavy cream

Cheese & Topping

  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese

Seasonings & Garnish

  • 1 teaspoon smoked paprika
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon sea salt (or to taste)
  • 2 tablespoons chopped fresh parsley

Instructions

Assembling the Casserole

  1. Sauté Aromatics. Return the skillet to medium heat, add a splash of olive oil if needed, then toss in the diced onion, bell pepper, and a minced garlic clove. Cook, stirring occasionally, for 4‑5 minutes until the vegetables are softened and fragrant. This step builds the flavor base that will permeate the entire casserole.
  2. Mix the Custard. In a large bowl whisk together the six eggs, whole milk, heavy cream, a pinch of salt, and black pepper until the mixture is smooth and slightly frothy. The dairy adds richness, while the eggs provide structure that holds the casserole together as it bakes.
  3. Combine Layers. Lightly grease a 9‑x‑13‑inch baking dish. Evenly spread the roasted potatoes, sautéed vegetables, and browned sausage across the bottom. Sprinkle the shredded cheddar and mozzarella over the top, reserving a tablespoon of each for the final crust. Pour the custard evenly over the layered ingredients, allowing it to seep into every nook.
  4. Add Final Topping. Sprinkle the remaining cheese and chopped parsley over the surface. The cheese will form a bubbly, golden crust, while the parsley adds a fresh pop of color and flavor just before serving.
