  • 1 cup dried green lentils, rinsed
  • 2 medium carrots, diced
  • 2 parsnips, diced
  • 1 large sweet potato, cubed
  • 1 small turnip, cubed
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • 1 bay leaf
  • Salt & black pepper to taste
  • 2 cups baby spinach
  • 2 tbsp lemon juice
Instructions
  1. 1 Add lentils, carrots, parsnips, sweet potato, turnip, onion, and garlic to slow cooker.
  2. 2 Pour in broth; stir in thyme, paprika, cumin, bay leaf, 1 tsp salt, and ½ tsp pepper.
  3. 3 Cover and cook on LOW 8–9 hours or HIGH 4–5 hours, until lentils and veggies are tender.
  4. 4 Stir in spinach and lemon juice; cover 5 minutes until wilted. Remove bay leaf.
  5. 5 Taste and adjust seasoning. Serve hot with crusty bread or freeze in portions.
