  3. Incorporate Garlic & Herbs. Stir in the minced garlic, remaining thyme, and bay leaf. Cook for 30 seconds—just long enough for the garlic to become fragrant without browning.
  4. Deglaze & Add Liquids. Pour in the chicken broth, scraping the browned bits from the pot’s bottom with a wooden spoon; these are flavor gold. Bring the mixture to a gentle boil, then reduce to a steady simmer.
  5. Cook the Rice. Stir in the rinsed rice, ensuring it’s evenly distributed. Cover the pot partially and let the soup simmer for 18‑20 minutes, or until the rice is tender and the chicken is cooked through (internal temperature 165 °F).
  6. Finish with Brightness. Remove the bay leaf. Stir in the lemon juice and adjust salt and pepper to taste. Let the soup rest for 2 minutes so the lemon flavor integrates fully.
