  • 1 cup frozen peas and carrots mix

Seasonings & Garnish

  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • Salt and freshly cracked black pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)
  • 2 tbsp olive oil

Instructions

Searing the Chicken

  1. Heat the Skillet. Place a large oven‑safe skillet over medium‑high heat for 2–3 minutes, then add 2 tbsp olive oil. The oil should shimmer but not smoke, indicating the perfect temperature for a quick sear.
  2. Sear Both Sides. Add the seasoned chicken breasts, leaving space between them. Cook without moving for 4 minutes until a golden crust forms, then flip and sear the other side another 3–4 minutes. This step locks in juices and builds flavor through caramelization.
  3. Remove and Set Aside. Transfer the partially cooked chicken to a plate. It will finish cooking in the oven, but the initial sear prevents a dry final product and adds a deep, savory foundation for the sauce.

Assembling and Baking

  1. Layer the Base. Spread the rinsed rice evenly across the skillet, then scatter the frozen peas‑carrot mix over the rice. The rice will absorb the sauce while baking, creating a fluffy, flavorful base.
  2. Arrange the Chicken. Nestle the seared chicken breasts on top of the rice and vegetables. Spoon a generous amount of the creamy sauce over each piece, ensuring every bite will be coated.
  3. Bake. Transfer the skillet to a preheated oven at 375°F (190°C). Bake uncovered for 20–25 minutes, or until the rice is tender and the chicken reaches an internal temperature of 165°F (74°C). A bubbling surface and lightly browned edges signal perfection.
