Creamy Base
- 1 cup heavy cream
- 2 tablespoons all‑purpose flour

- 1 teaspoon dried thyme
- ½ teaspoon smoked paprika

- 2 tablespoons fresh parsley, chopped (for garnish)
- 1 sheet frozen puff pastry, cut into 1‑inch cubes
Instructions
Searing the Chicken
- Heat the Pan. Place a large Dutch oven or heavy pot over medium‑high heat and add the olive oil. When the oil shimmers, it’s hot enough for a quick sear.
- Brown the Chicken. Add the seasoned chicken in a single layer, avoiding crowding. Let each side brown for 3–4 minutes without moving the pieces; this creates a caramelized crust that locks in juices and adds depth to the broth.
- Remove and Set Aside. Transfer the browned chicken to a plate. This step prevents the chicken from over‑cooking later and leaves flavorful fond on the bottom of the pot.
Building the Soup Base
- Sauté Aromatics. Reduce heat to medium and add the carrots and potatoes to the same pot. Cook, stirring occasionally, for about 5 minutes until they start to soften and pick up the browned bits.
- Make a Roux. Sprinkle the flour over the vegetables and stir for 1 minute. The flour will absorb the fat and create a thickening base; this prevents a grainy texture later.
- Deglaze & Add Liquids. Slowly pour in the chicken broth while whisking, scraping the fond from the bottom. Once smooth, stir in the heavy cream, thyme, and a pinch more salt and pepper.
- Simmer. Return the chicken to the pot, bring the mixture to a gentle boil, then lower to a simmer. Cover and let cook for 15 minutes, or until the vegetables are tender and the chicken is cooked through (internal temperature 165°F/74°C).
- Finish with Peas. Stir in the thawed peas during the last 3 minutes of cooking; they need only heat through, preserving their bright color and sweet snap.
