Ingredients

Bread & Custard

  • 8 slices thick‑cut brioche (about 1‑inch thick)
  • 1 ½ cups full‑fat coconut milk
  • ¼ cup shredded sweetened coconut, toasted
  • 2 large eggs
  • 2 tablespoons granulated sugar
  • ½ teaspoon vanilla extract

Glaze & Finishing Touches

  • ½ cup pineapple juice
  • 2 tablespoons dark rum (optional)
  • 2 tablespoons honey or maple syrup
  • Zest of 1 lime

Seasonings & Garnish

  • ¼ teaspoon sea salt
  • 2 tablespoons unsalted butter, for pan‑searing
  • Fresh mint leaves, for garnish

Instructions

Pan‑Searing

  1. Heat the Skillet. Place a large non‑stick skillet over medium‑high heat and melt 2 tablespoons unsalted butter. When the butter foams and begins to turn light golden, the pan is ready for a perfect sear.
  2. Sear the Slices. Gently lay the soaked brioche slices in the skillet, leaving space between each piece. Cook for 3‑4 minutes until the bottom is deep golden‑brown and crisp. Flip carefully and repeat on the other side. This creates a caramelized crust that locks in moisture.
  3. Deglaze with Lime. Once all slices are seared, lower the heat to medium and sprinkle the zest of 1 lime over the pan. Stir briefly to release aromatic oils, which brighten the overall flavor profile.
