Ingredients

Crust

  • 1 ½ cups graham cracker crumbs
  • 3 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar

Cheesecake Filling

  • 16 oz (2 packages) cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg

Churro Topping

  • 3 tbsp unsalted butter, melted
  • ¼ cup brown sugar, packed
  • 2 tbsp all‑purpose flour
  • 1 tbsp ground cinnamon

Cinnamon‑Sugar Glaze

  • ½ cup powdered sugar
  • 1 tbsp milk (or heavy cream)
  • ½ tsp ground cinnamon

Instructions

Baking the Cheesecake

  1. Preheat Oven. Set the oven to 325°F (165°C). A moderate temperature ensures the cheesecake sets gently without cracking.
  2. Combine Layers. Pour the cheesecake batter over the prepared crust, smoothing the top with a spatula. The batter should evenly cover the crust.
  3. Bake. Place the pan on the middle rack and bake for 30‑35 minutes, or until the edges are set and the center jiggles slightly when the pan is gently shaken. This gentle wobble signals a perfectly creamy interior.
  4. Cool. Remove from the oven and let the cheesecake cool on a wire rack for 15 minutes, then refrigerate for at least 2 hours (or overnight) to fully set.
