Ingredients

Dry Ingredients

  • 2 ¼ cups all‑purpose flour
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg

Wet Ingredients

  • ¾ cup unsalted butter, softened
  • ½ cup dark brown sugar, packed
  • ¼ cup apple cider (preferably fresh)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract

Glaze (Optional)

  • ¼ cup powdered sugar
  • 1 tablespoon apple cider
  • Pinch of cinnamon (for drizzle)

Instructions

Combining Wet & Dry Elements

  1. Incorporate Liquid. Add the egg, vanilla, and apple cider to the butter‑sugar mixture. Beat on low speed until just combined; over‑mixing can develop gluten, leading to a tougher cookie.
  2. Merge Dry Ingredients. Gradually fold the flour mixture into the wet base using a spatula. Scrape the bowl sides to ensure no streaks remain. The dough should be slightly sticky but manageable.
  3. Chill the Dough. Cover the bowl with plastic wrap and refrigerate for 15‑20 minutes. Cooling firms the butter, making the dough easier to portion and preventing excessive spreading during baking.

Baking the Cookies

  1. Preheat & Prepare. Set the oven to 350°F (175°C). Line two baking sheets with parchment paper; this promotes even browning and easy release.
  2. Scoop & Shape. Using a tablespoon or small ice‑cream scoop, portion dough onto the sheets, spacing them 2 inches apart. Gently flatten each mound; they will spread slightly, but keeping a uniform shape ensures even baking.
  3. Bake. Slide the trays into the center of the oven. Bake for 12‑14 minutes, or until the edges turn a light golden brown while the centers remain soft. A visual cue is a faint crack on the surface.
  4. Cool. Allow cookies to rest on the sheet for 3 minutes before transferring to a wire rack. This short steam period finishes the interior set without drying the crumb.
