Instructions
Assembling the Quesadilla
- Layer the Base. Place one tortilla flat on a clean surface. Sprinkle a generous handful of the three‑cheese blend over half of the tortilla, leaving a ½‑inch border.
- Add Fillings. Evenly distribute the scrambled eggs, crumbled sausage (if using), diced red bell pepper, and chopped spinach over the cheese. Sprinkle chopped cilantro for fresh aroma.
- Top with More Cheese. Add another light layer of the cheese blend to help seal the quesadilla when folded. This extra cheese ensures a gooey interior.
- Fold & Seal. Gently fold the tortilla in half, pressing lightly with your hands to adhere the edges. The cheese on the inside will act as a natural “glue.”
Cooking the Quesadilla
- Heat the Skillet. Return the non‑stick skillet to medium‑high heat and add a teaspoon of olive oil. Allow the oil to shimmer—about 30 seconds—before adding the folded quesadilla.
- Sear One Side. Cook for 2‑3 minutes without moving the quesadilla. You’ll see golden brown specks forming along the edges; this indicates proper Maillard reaction and a crisp texture.
- Flip Carefully. Using a wide spatula, turn the quesadilla over and cook the second side for another 2‑3 minutes, until the cheese is fully melted and the tortilla is uniformly golden.
