- 2 cloves garlic, minced

- ¼ teaspoon smoked paprika

Instructions
Cooking the Beef and Pasta
- Brown the ground beef. Heat a large skillet over medium‑high heat. Add the beef, breaking it up with a wooden spoon. Cook 5‑6 minutes, stirring occasionally, until no longer pink and lightly caramelized. This step builds flavor through the Maillard reaction.
- Season and sauté aromatics. Sprinkle the beef with a pinch of salt and pepper, then push it to the side of the pan. Add the diced onion and sauté 2‑3 minutes until translucent. Toss in the garlic and cook another 30 seconds, being careful not to burn.
- Make the roux. Reduce heat to medium. Push the meat‑onion mixture to the edges and melt the butter in the center. Sprinkle the flour over the butter, whisking constantly for 1‑2 minutes until it turns a light golden hue—this eliminates raw flour taste.
- Build the sauce. Slowly whisk in the milk, followed by the beef broth, creating a smooth, glossy mixture. Add mustard powder, smoked paprika, and a dash more salt. Bring to a gentle simmer; the sauce will thicken within 3‑4 minutes.
- Combine pasta. Stir in the uncooked elbow macaroni, ensuring each piece is coated with sauce. Cover the skillet and let it simmer on low heat for 10‑12 minutes, stirring once halfway through, until the pasta is al dente and has absorbed most of the liquid.
- Finish with cheese. Remove the pan from heat. Sprinkle the shredded cheddar evenly over the top, then cover for 2 minutes. The residual heat will melt the cheese into a glossy blanket. Give the dish a final stir to distribute the cheese throughout.
