Ingredients

  • 1 pound smoked sausage, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 head cabbage, shredded
  • 1 teaspoon caraway seeds
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1/4 cup chicken broth

Instructions

  1. Heat the Sausage. In a large skillet, heat the olive oil over medium-high heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage from the skillet and set aside.
  2. Soften the Onions. Reduce the heat to medium and add the chopped onion to the skillet. Cook until the onion is softened, about 5 minutes.
  3. Add Garlic and Caraway Seeds. Add the minced garlic and caraway seeds to the skillet and cook for 1 minute, until fragrant.
  4. Add Cabbage. Add the shredded cabbage to the skillet and cook until it starts to soften, about 5 minutes.
  5. Return Sausage and Add Liquid. Return the cooked sausage to the skillet and add the apple cider vinegar, chicken broth, salt, and pepper. Stir to combine.
  6. Simmer and Serve. Reduce the heat to low and simmer the skillet, covered, for 15-20 minutes, until the cabbage is tender. Serve hot, garnished with chopped fresh parsley or thyme, if desired.

Notes

  • Storage tip: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop.
  • Make ahead: Prepare the skillet up to a day in advance, but do not cook the cabbage until just before serving.
  • Substitution: Swap the smoked sausage for andouille or kielbasa sausage for a different flavor.
  • Pro tip: Use a cast-iron skillet for the best results, as it retains heat well and can be used at high temperatures.
