Cooking Process

  1. Heat the Skillet. Place a large cast‑iron skillet over medium‑high heat for 3 minutes. Add 1 tablespoon olive oil and swirl until it coats the surface and begins to shimmer, indicating the pan is hot enough for a proper sear.
  2. Sauté the Vegetables. Toss the diced red bell pepper and red onion into the pan. Cook, stirring occasionally, for 3‑4 minutes until they soften and develop a light caramel color. This step builds a sweet, aromatic base for the beef.
  3. Brown the Beef. Push the vegetables to the edge of the skillet, then add the seasoned ground beef. Break it into a rough mound and let it sit undisturbed for 2 minutes to develop a brown crust. Stir and continue cooking for another 4‑5 minutes until fully browned, breaking up any large clumps.
  4. Incorporate the Chipotle Sauce. Reduce heat to medium and stir in the minced chipotle, lime juice, and smoked paprika. Cook for 30 seconds, then fold in the Greek yogurt, creating a creamy, smoky sauce that coats the meat and vegetables. Simmer for 2 minutes, allowing the flavors to meld.
  5. Assemble the Burritos. Warm each tortilla in a dry skillet for 15 seconds per side to make them pliable. Spoon an even portion of the beef mixture onto the center, sprinkle shredded cheddar, and add a few cilantro leaves. Fold the sides over the filling, then roll tightly.
