  • 1 tbsp lime juice (fresh)
  • ¼ cup sour cream

  • ½ tsp garlic powder
  • Salt and freshly ground black pepper, to taste
  • Fresh cilantro leaves, chopped (optional)

Instructions

Searing & Simmering

  1. Heat the Skillet. Place a large cast‑iron skillet over medium‑high heat and add 2 tbsp olive oil. When the oil shimmers, it’s ready for the beef.
  2. Sear the Cubes. Add the beef in a single layer, avoiding crowding. Let each side brown for 3‑4 minutes without moving; this creates a caramelized crust that locks in juices.
  3. Deglaze & Add Sauce. Reduce heat to medium, stir in the minced chipotle, smoked paprika, lime juice, and sour cream. Scrape the browned bits from the pan—they’re flavor gold.
  4. Simmer. Add the black beans, stir gently, and let the mixture simmer for 8‑10 minutes, stirring occasionally, until the sauce thickens and coats the beef.

Assembling the Burritos

  1. Warm the Tortillas. Quickly heat each tortilla in a dry skillet for 20‑30 seconds per side, just until pliable. Warmed tortillas prevent tearing during folding.
  2. Layer the Fillings. Spoon a generous portion of the beef‑bean mixture onto the center of each tortilla. Sprinkle the Monterey Jack and cheddar evenly, allowing the residual heat to melt the cheese.
  3. Roll & Toast. Fold the sides in, then roll tightly. Return the rolled burritos seam‑side down to the skillet, pressing lightly. Toast for 2‑3 minutes per side until the exterior is golden and the cheese is fully melted.
